Instructions:

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish or a similar-sized casserole dish.
  2. Prepare the Veggies:
  • Halve the cherry tomatoes and dice the zucchini, bell pepper, and onion. If using spinach, roughly chop it as well.

Combine Ingredients:

    • In the prepared baking dish, add the dry orzo, vegetable broth, cherry tomatoes, zucchini, red onion, bell pepper, frozen peas, and spinach (if using).
